Take a 24-pack of sugar cookie dough and put them in a mini muffin pan.
Bake the sugar cookie dough as the directions say.
For the fruit pizza topping, combine one block of softened cream cheese, two tablespoons of softened butter, a splash of vanilla, and 1 and 1/4 cup of powdered sugar.
Mix the topping ingredients really well until everything's combined.
Once the sugar cookies come out of the oven, make a little cup out of them.
Place the sugar cookie cups in the freezer for 5 to 10 minutes.
Twist the cookie cups to pop them right out of the muffin pan.
Using a piping bag, fill the cookie cups with the prepared cream cheese topping.
Cut your desired fruit (strawberries, blueberries, and kiwi are suggested) into small cubes.
Add the cut fruit right on top of the filled cookie cups.
