Directions

  1. 1Get your jars sanitizing in a hot water bath; they need to boil for at least five minutes.
  2. 2Put your lids and screw-on rings into a saucepan and dump hot water over them to sanitize.
  3. 3Put 8 pounds of strawberries (minus waste) in your blender and set them aside.
  4. 4Add 3.5 cups of lemon juice to the blender with the strawberries.
  5. 5Blend the strawberries and lemon juice until pureed.
  6. 6Pour the strawberry lemon puree into a pot, scraping out all contents.
  7. 7Add 6 cups of sugar to the pot.
  8. 8Mix well and return to the stove over medium-high heat, just until the sugars dissolve; do not bring to a boil.
  9. 9While the mixture is on the stove, pluck out your sanitized jars and place them on a cookie sheet lined with a towel.
  10. 10Fill the jars to the bottom notch/ring with the concentrate.
  11. 11Run plastic silverware inside the jars to ensure there are no air bubbles.
  12. 12Using a damp cloth, clean the rim of each jar.
  13. 13Ensure your canner is back on high heat and the water is at a full rolling boil.
  14. 14Top jars with sanitized lids and screw tops, tightening them finger-tight.
  15. 15Place the jars into the hot water bath for 15 minutes.
  16. 16Once the timer goes off, carefully pluck the jars out of the water and place them back on the towel-lined cookie sheet.
  17. 17Do not disturb the jars for 24 hours to allow them to seal.
