1Add boneless chicken or paneer or tofu with any vegetables of your choice, some onion and garlic into your food processor or chopper.
2Blend chicken, diced vegetables, onion, and garlic in a food processor until coarsely combined.
3Combine the mixture with breadcrumbs or powdered oats, peri-peri seasoning, nutritional yeast or cheese, salt and pepper and give everything a good mix.
4Transfer the blended mixture to a bowl.
5Add breadcrumbs, peri peri seasoning, nutritional yeast or cheese (if using), salt, and pepper and mix well.
6Divide and roughly shape the mixture into 4 equal-sized patties.
7Preheat the air fryer to 200°C.
8Place the patties on a greased air fryer tray.
9Brush or spray with some oil.
10Air fry for about 7 minutes, flipping halfway through.
11Alternatively, if using oven bake at 200°C for 12-15 minutes, flipping halfway through.
12You can also shallow fry these with very little oil.
13Let the patties rest for about a couple of minutes.
14For the garlic yogurt dip, mix together ½ cup Greek yogurt or thick curd, 1 tsp honey, 1 tsp grated garlic, 2 tbsp chopped spring onion greens, 1 tsp chopped coriander leaves, and salt to taste.
15Serve hot patties with the garlic yogurt dip.
