1In a bowl, add light mayo, low sugar ketchup, Worcestershire sauce, salt, pepper and garlic powder. Mix and refrigerate.
2Cut 400g of potatoes using a crinkle cutter or a knife.
3Add cooking oil spray, chicken stock powder and paprika to the potatoes. Mix and air fry or oven bake at 200°C/400°F for 20-25 minutes (air fryer) or 25-35 minutes (oven).
4Cut 500g of chicken breast into thin strips. Season with smoked paprika, cayenne pepper, black pepper, salt and garlic powder. Mix.
5On a plate, add cornflakes with a dash of the same seasonings and crush into smaller pieces.
6Dredge each piece of chicken in flour, then whisked eggs, then crushed cornflakes.
7Spray with light cooking oil and air fry or oven bake at 190°C/375°F for 16-20 minutes (air fryer) or 18-22 minutes (oven), flipping halfway.
