Directions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Lightly grease a 9x13 baking dish.
  3. 3In a large mixing bowl, combine the softened cream cheese, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and black pepper.
  4. 4Mix until completely smooth.
  5. 5Gently fold in the chopped raw shrimp.
  6. 6Warm the tortillas slightly (about 10-15 seconds in the microwave) so they are pliable and won't crack.
  7. 7Spoon a generous line of the creamy shrimp mixture down the center of each tortilla and roll them up tightly.
  8. 8Place the roll ups seam-side down in the prepared baking dish so they stay securely closed.
  9. 9In a small bowl, mix the 2 tbsp melted butter, garlic salt, and dried parsley.
  10. 10Brush this garlic butter generously over the top of each tortilla.
  11. 11Bake for 18 to 20 minutes until the tortillas are crispy and golden brown, and the shrimp filling is bubbly and cooked through.
  12. 12While the roll ups bake, prepare the dipping sauce.
  13. 13Melt the ½ cup of butter in a small saucepan over low heat.
  14. 14Add the minced garlic and cook for 30 seconds until fragrant.
  15. 15Stir in the lemon juice and fresh parsley, then remove from heat.
  16. 16Serve the roll ups hot, dunked straight into that warm lemon garlic butter sauce!
