Chicken Tikka Masala

Directions

  1. 1Add cubed chicken thighs to a bowl.
  2. 2Add yogurt, ginger garlic paste, lemon juice, salt, chili powder, cumin powder, coriander powder, garam masala and turmeric.
  3. 3Mix well and let it marinate for at least 30 minutes, or overnight for max flavor.
  4. 4Cut an onion in half, cut both the ends off, make vertical and horizontal cuts, and dice.
  5. 5Set the pan to medium high to high heat.
  6. 6Add a tiny bit of oil and the marinated chicken.
  7. 7Cook till you get a good sear all around and take the chicken out.
  8. 8Add ghee, chopped onions and a tiny bit of water to deglaze the pan.
  9. 9Cook for 5 to 6 minutes.
  10. 10Add garam masala, cumin powder, coriander powder, turmeric, Thai green chilis and ginger garlic paste.
  11. 11Mix and cook for 30 seconds before adding crushed tomatoes, salt, and chili powder.
  12. 12Drop the heat to medium low and let it cook for around 15 mins till it reduces and thickens up.
  13. 13Optionally add the remaining marinade and definitely add heavy cream and the par-cooked chicken.
  14. 14Mix it all up and cook for 5 minutes.
  15. 15Top it off with coriander and serve.
