Directions

  1. 1In a large skillet over medium heat, add the ground beef and chopped onion.
  2. 2Cook for 6–8 minutes, breaking the beef into small crumbles, until fully browned and the onions are soft.
  3. 3Drain excess grease if needed.
  4. 4Pour in ½ cup of enchilada sauce and stir well to coat the beef mixture.
  5. 5Let simmer for 2–3 minutes so the flavors blend together.
  6. 6Remove from heat.
  7. 7Preheat oven to 350°F.
  8. 8Lightly grease a baking dish large enough to hold all the rolled tortillas.
  9. 9Lay one tortilla flat.
  10. 10Spoon a generous amount of the beef mixture into the center.
  11. 11Sprinkle with shredded cheese and add a small dollop of sour cream.
  12. 12Roll the tortilla tightly, burrito-style.
  13. 13Place seam-side down in the prepared baking dish.
  14. 14Repeat with remaining tortillas.
  15. 15Pour the remaining ½ cup of enchilada sauce evenly over the rolled tortillas.
  16. 16Sprinkle the rest of the shredded cheese evenly on top.
  17. 17Bake for 20 minutes, or until the cheese is melted and bubbly.
  18. 18Remove from the oven.
  19. 19Top with sliced green onions and black olives if using.
  20. 20Serve warm with extra sour cream or your favorite hot sauce.
