Directions
- 1In a large skillet over medium heat, add the ground beef and chopped onion.
- 2Cook for 6–8 minutes, breaking the beef into small crumbles, until fully browned and the onions are soft.
- 3Drain excess grease if needed.
- 4Pour in ½ cup of enchilada sauce and stir well to coat the beef mixture.
- 5Let simmer for 2–3 minutes so the flavors blend together.
- 6Remove from heat.
- 7Preheat oven to 350°F.
- 8Lightly grease a baking dish large enough to hold all the rolled tortillas.
- 9Lay one tortilla flat.
- 10Spoon a generous amount of the beef mixture into the center.
- 11Sprinkle with shredded cheese and add a small dollop of sour cream.
- 12Roll the tortilla tightly, burrito-style.
- 13Place seam-side down in the prepared baking dish.
- 14Repeat with remaining tortillas.
- 15Pour the remaining ½ cup of enchilada sauce evenly over the rolled tortillas.
- 16Sprinkle the rest of the shredded cheese evenly on top.
- 17Bake for 20 minutes, or until the cheese is melted and bubbly.
- 18Remove from the oven.
- 19Top with sliced green onions and black olives if using.
- 20Serve warm with extra sour cream or your favorite hot sauce.
