In a large skillet over medium heat, add the ground beef and chopped onion.

Cook for 6–8 minutes, breaking the beef into small crumbles, until fully browned and the onions are soft.

Drain excess grease if needed.

Pour in ½ cup of enchilada sauce and stir well to coat the beef mixture.

Let simmer for 2–3 minutes so the flavors blend together.

Remove from heat.

Preheat oven to 350°F.

Lightly grease a baking dish large enough to hold all the rolled tortillas.

Lay one tortilla flat.

Spoon a generous amount of the beef mixture into the center.

Sprinkle with shredded cheese and add a small dollop of sour cream.

Roll the tortilla tightly, burrito-style.

Place seam-side down in the prepared baking dish.

Repeat with remaining tortillas.

Pour the remaining ½ cup of enchilada sauce evenly over the rolled tortillas.
