1Slice chicken into cubes and season with salt, oregano, smoked paprika, garlic powder, onion powder, cumin and olive oil. Mix until the color changes.
2Add light butter to a pan with chopped onions and mixed bell peppers. Cook for 5 minutes until soft.
3Add extra fajita seasoning with lots of garlic. Mix and cook for another 5 minutes until golden and fragrant.
4Set aside. Next, cook the seasoned chicken in light butter on medium heat for 4–5 minutes each side until golden and crispy.
5Lower the heat, add the fajita mix, a drizzle of honey and parsley. Give it a good mix until juicy and delicious.
6Set the chicken aside. Add the remaining fajita mix and the blended cheese sauce (milk, cream cheese, and cottage cheese). Stir until smooth and creamy.
7Add low-fat cheddar and stir till melted and cheesy.
8Add cooked macaroni and stir to combine. Serve and enjoy!
