Chicken Caesar Smashed Tacos

Directions

  1. 1Add the egg yolk, dijon mustard, garlic, and anchovy paste to a bowl and mix well.
  2. 2Add the Parmigiano Reggiano, Worcestershire sauce, Tabasco, Maggi, and some lemon juice to the bowl; mix well, tasting and adjusting the lemon as needed.
  3. 3Emulsify the olive oil into the dressing until it is smooth and adjust salt and pepper to taste.
  4. 4Cut the chicken breast and chicken thighs into cubes.
  5. 5Add the cubed chicken, serrano, scallions, lemon zest, spices, and Parmigiano Reggiano to a food processor.
  6. 6Process the mixture until it is smooth.
  7. 7Cut the pita bread in half.
  8. 8Chop the romaine lettuce very small.
  9. 9Add the Caesar dressing to the chopped romaine lettuce and mix.
  10. 10Divide the chicken mixture onto the pita halves and spread it evenly.
  11. 11Drizzle olive oil on the chicken side of the pitas.
  12. 12Griddle the pitas on the Weber Griddle until golden, pressing them often for about 5 minutes.
  13. 13Top the cooked pita with the Caesar salad, lots of Parmigiano Reggiano, and black pepper.
  14. 14Serve with lemon wedges.

  • 0.25 cup Freshly grated parmigiano reggiano
  • 0.5 Lemon
  • 1 dash Maggi
  • 0.25 tsp Worcestershire sauce
  • 1 1-2 squirts Tabasco
  • 0.5 cup Olive oil
  • 1 tsp Dijon mustard

Tips
