Aloha Chicken and Rice Bake

Directions

  1. 1Add one and a half cups of minute rice to your baking dish.
  2. 2Add two cubed chicken breasts (about a pound).
  3. 3Add one diced red bell pepper.
  4. 4Add half of a red onion, diced.
  5. 5Add one 20 oz can of pineapple tidbits and juice.
  6. 6Mix all the ingredients in the baking dish together.
  7. 7To make the sauce, start with three quarters of a cup of chicken broth.
  8. 8Add half a cup of coconut aminos or soy sauce.
  9. 9Add a quarter cup of brown sugar.
  10. 10Add three or four minced garlic cloves.
  11. 11Grate some fresh ginger into the sauce mixture if you have any.
  12. 12Whisk the sauce ingredients until beautifully combined.
  13. 13Pour the sauce on top of everything else in the baking dish.
  14. 14Cover the entire dish with foil.
  15. 15Bake in the oven at 425° for about 50 minutes.
  16. 16When it comes out of the oven, carefully remove the foil.
  17. 17Check to make sure there isn't still too much liquid; if there is, put the foil back on and throw it back in the oven.
  18. 18Sprinkle fresh cut green onions on top if desired.

  • 0.5 cup coconut aminos or soy sauce
  • 0.25 cup brown sugar
  • 3 minced garlic cloves
  • fresh ginger
  • fresh cut green onions

Tips

  • If there is too much liquid after baking, remove the foil, and put it back in the oven.
  • Sprinkle fresh cut green onions on top for garnish.
