1Keep a pot of water with salt and 1 tsp dried oregano to boil.
2Finely chop 1 medium sized onion and 2 cloves of garlic.
3Add 2 portions of pasta to the boiling water.
4Set to medium low heat and add 3 tbsp extra virgin olive oil.
5Add the finely chopped onion and fry until golden brown.
6Stir the onions frequently so that it doesn't burn.
7Add the minced garlic and fry for 30 seconds.
8Add 1 tsp of red chilli flakes and fry for 30 seconds.
9Set aside 2 tsp of the chilli onion crisp for garnish.
10Add the cooked pasta with 1/2 cup pasta water directly into the pan.
11Stir until the sauce is thick and glossy.
12Add more pasta water if the sauce gets too dry.
13Plate the pasta and garnish with reserved chilli onion crisp, fresh parsley, lemon juice and grated cheese.

Tips
The salt should be sufficient as pasta water is salted. If not add some salt while stirring the pasta. Remember that cheese will also be salty so don't overdo it.
Stir onions frequently so they don't burn and taste bitter.
Infusing pasta water with oregano/herbs gives a delicious flavour to this pasta so don't skip it.
