  1. 1Peel and chop 16 oz of potatoes into roughly 1-inch pieces.
  2. 2Put the potatoes into a pot and cover them with cold water, leaving about an inch of extra water on top.
  3. 3Put the pot on a medium-high heat and bring the water to a boil. Cook for 5-10 minutes or until fork-tender.
  4. 4Drain the potatoes and let them cool for about 10 minutes.
  5. 5Press the potatoes through a sieve or ricer into a bowl.
  6. 6Add 2 cups of all-purpose flour, 2 large eggs, and 1 teaspoon of salt to the potatoes.
  7. 7Mix everything with a fork until a shaggy dough forms.
  8. 8Lightly flour your hands and countertop, then knead the dough until a smooth ball forms.
  9. 9Divide the dough into six equal pieces.
  10. 10Roll each piece of dough into a half-inch thick log, and cut into three-quarter-inch pieces.
  11. 11Use a gnocchi board or a fork to create ridges on each gnocchi piece.
  12. 12Place gnocchi on a rimmed baking sheet lined with parchment paper, and lightly flour to prevent sticking.
  13. 13Bring a big pot of water to a boil, add 2 teaspoons of salt, and cook the gnocchi in batches for 3-4 minutes, until they float.
  14. 14Transfer cooked gnocchi to a bowl and finish them off in a pan with browned butter and freshly grated parmesan cheese. Garnish with fresh basil or fried sage.
