Serves 1

Directions

  1. 1Heat the oven to 400°F and line the pan.
  2. 2Snap the ends off the asparagus, toss with oil, salt, and pepper, and lay on one side of the pan.
  3. 3Pat the salmon dry, set on the other side of the pan skin-side down, season, and top with lemon slices.
  4. 4Roast for 12 to 15 minutes until salmon flakes or reaches 145°F, then squeeze remaining lemon over everything.

Ingredients

  • 6 oz salmon fillet
  • 1 small bunch asparagus
  • 1 whole lemon
  • 1 tbsp olive oil
  • salt
  • pepper

Equipment

sheet panparchment paper

Tips

  • Butter can be used instead of oil.
  • If asparagus is thin, add it a few minutes after the fish.
  • White stuff on the fish is harmless protein, indicating it is near done.
  • Start checking the salmon at 10 minutes to avoid dryness.
