Directions

  1. 1Chop Napa cabbage, salt it, and massage it.
  2. 2Saute carrots first and let them cook down.
  3. 3Add mushrooms and green onions to the carrots.
  4. 4Once mushrooms start to cook down, push everything to the side.
  5. 5Add ground turkey to the pan.
  6. 6Once the turkey is mostly cooked, add garlic and ginger and saute aggressively.
  7. 7Add soy sauce, oyster sauce, rice vinegar, a touch of sugar, white pepper, and corn starch to the filling.
  8. 8Cut the heat and add sesame oil to the filling.
  9. 9Rinse the cabbage well and squeeze out all its moisture.
  10. 10Add the meat and veggie mixture and cilantro to the cabbage.
  11. 11Soak vermicelli noodles in warm water, then strain them.
  12. 12Using kitchen shears, cut the vermicelli noodles into smaller pieces and add them to the filling.
  13. 13Take a spring roll wrapper, face it like a diamond, and add some filling.
  14. 14Fold over the bottom corner, tuck it, and ensure there's no air.
  15. 15Tuck in the side corners and continue to roll.
  16. 16Brush the last corner with a little egg wash and complete the roll.
  17. 17Heat some oil in a pan; use the chopstick test to check if it's ready.
  18. 18Carefully drop the spring rolls into the hot oil and fry for about 5 minutes, flipping them as needed, until golden brown.
  19. 19Carefully remove the golden brown spring rolls from the oil.

Tips

  • If you have the soap gene for cilantro, leave it out.
  • You can use any ground protein or make it meatless.
  • Use corn starch to keep everything moist.
  • Rinse and squeeze out all moisture from the cabbage after salting and massaging.
  • Cut vermicelli noodles into smaller pieces for the filling.
  • Don't overfill the spring roll wrappers.
  • Brush the last corner of the wrapper with egg wash to seal.
