Directions

  1. 1Brown the butter. Add the butter to a saucepan over medium-high heat. Allow to melt and slightly brown (~5-8 minutes).
  2. 2Once just golden brown, add the mashed bananas and sprinkle about 1-2 tbsp of the brown sugar on top. Mix and allow to simmer for 2-3 minutes, until the bananas are slightly caramelized in the brown butter.
  3. 3Remove from the heat and immediately pour into a large bowl. Set aside and allow to cool slightly.
  4. 4In a medium bowl, whisk together the flour, oats, cinnamon, baking soda, baking powder, and salt. Set aside.
  5. 5Once the brown butter/caramelized mashed banana mixture is slightly cooled, add both sugars and whisk until well combined.
