Drain and rinse two cans of chickpeas.

Dice one red onion.

Add the drained chickpeas and diced red onion into a bowl.

Chop one-third cup of parsley and add it to the bowl.

Zest one lemon into the bowl.

Add half a cup of hemp hearts to the bowl.

Add a whole tub of feta to the bowl.

For the dressing, combine three tablespoons of olive oil, three tablespoons of lemon juice, and one tablespoon of maple syrup or honey.

Add a good amount of salt and a few dashes of pepper to the dressing.

Shake the dressing vigorously.

Dress the salad with the prepared dressing.

1 tub feta
3 tablespoons olive oil
3 tablespoons lemon juice
1 tablespoon maple syrup or honey

1 few dashes pepper

The lemon really lifts the flavor, so make sure to use a good amount.
You can customize the recipe, for example, by adding less oil or changing the type of oil.
You can substitute feta with another ingredient if desired.
