Bacon Mac and Cheese

Directions

  1. 1Start by cooking your bacon in a medium-sized pot until it is nice and crispy.
  2. 2While cooking the bacon, shred all the cheeses and set them aside.
  3. 3Once the bacon is cooked, take it out of the fat, making sure to drain it.
  4. 4Add ⅓ cup of flour to the bacon fat and cook until you no longer smell the flour.
  5. 5Add milk and whisk until smooth.
  6. 6Add the American cheese first, ensuring it is fully melted. Then, add the rest of the cheese very slowly, stirring in around 2 oz at a time until 24 oz is fully combined.
  7. 7Once the cheese sauce is done, set it aside.
  8. 8Cook pasta in salted water until al dente.
  9. 9Drain the pasta and add the cheese sauce until fully combined.
  10. 10In a pan or vessel for your macaroni, add layers of pasta and cheese, continuing until the cheese is on top and ready to bake.
  11. 11Bake at 400 degrees Fahrenheit for 10-15 minutes and then broil until the top is crispy.
  12. 12While the mac and cheese is baking, thinly slice your chives.
  13. 13Top with bacon and chives and enjoy while hot.

  • 1 cup Cooked Bacon
  • 2 tbsp Chives
  • 1 box Macaroni pasta
  • 1.75 quarts Milk
  • Bacon Fat
  • 1 stick Butter
  • 0.33 cup Flour
  • 8 oz Gouda
  • 8 oz White Sharp Cheddar
  • 12 oz Mild Cheddar
  • 4 oz American Cheese
  • 1 tbsp Garlic Powder
  • 1 tbsp Paprika
  • 1 tbsp Cayenne
  • 1 tbsp Black Pepper
  • 1 tbsp Oregano
  • 1 tbsp Onion Powder
  • 1 tbsp Dried Thyme

Tips

  • This recipe is actually so good, especially if you're lactose intolerant.
  • If your cheese sauce is thicker, cook it through more as the cheese probably did not melt, but blended.
  • Once cooked thoroughly, it should be very glossy and rich.
