Wash and cut the brinjals.

Finely chop the onions and green onions.

Brush the brinjals with oil and make small cuts on the skin of the brinjals.

Stuff the garlic cloves in the slits of the brinjals.

Place the brinjals on a grill and roast them.

Roast the tomatoes on the same grill.

Peel the skin of the roasted brinjals and chop them.

Peel the roasted tomatoes and chop them.

Grind the coriander leaves and green chilies into a paste.

Heat oil in a pan and add mustard seeds and cumin seeds.

Add the chopped onions and sauté until golden brown.

Add the chopped brinjals and tomatoes.

Add turmeric powder, red chili powder and salt to the pan.

Add the coriander-green chilies paste.

Mix everything well and cook until it reaches desired consistency.
