Instant Pot Butter Chicken Pasta

Directions

  1. 1Put the Instant Pot on sauté mode on high and add some oil.
  2. 2Sauté half of an onion until it is lightly golden brown.
  3. 3Add ginger and garlic paste and sauté until it no longer smells raw.
  4. 4Add the boneless chicken breast, cut into smaller cubes.
  5. 5Add one chicken bouillon cube and half a teaspoon of salt.
  6. 6Add butter chicken masala and some red chili powder (optional).
  7. 7Add a little bit of water to help sauté the spices down and loosen them up.
  8. 8Add a generous amount of tomato paste (about 4 tablespoons) and some splashes of water, while sautéing it down until it no longer smells raw and to loosen it up.
  9. 9Add the dry pasta (no need to boil beforehand) and mix it all together to get all the flavors incorporated.
  10. 10Add enough water to barely cover the pasta, but not more, to prevent it from getting mushy.
  11. 11Push down all of the pasta and chicken to make sure it's buried under the water to ensure it cooks evenly.
  12. 12Add the lid and put it on pressure cooker mode for 3 minutes on high.
  13. 13Release the pressure, using a towel to push the button on top, or the lever if you have a classic Instant Pot.
  14. 14Lift the lid and look at the perfectly cooked pasta.
  15. 15Add some heavy cream and stir it in really well until the sauce thickens up nicely.
  16. 16Add some mozzarella cheese (or any kind of stringy cheese you want) and some chopped cilantro or parsley for garnish.
  17. 17Mix the dish and enjoy.

Tips

  • Adjust salt to taste, as butter chicken masala contains no salt.
