Directions

1Peel the potatoes.
2Slice the potatoes in half lengthwise.
3Place two chopsticks on either side of the potato and make thin vertical cuts without cutting all the way through.
4Flip the potato over and make diagonal cuts.
5Place the cut potatoes on a baking sheet lined with parchment paper.
6In a small bowl, combine avocado oil, seasoning, and minced garlic.
7Mix well.
8Brush the seasoning mixture onto both sides of the potatoes.
9Bake until golden brown and crispy.
10In another small bowl, combine avocado oil mayo, chipotle, and seasoning.
11Mix well until smooth.
12Serve the crispy accordion potatoes with the dipping sauce.
