Directions

  1. 1Arrange thinly sliced potatoes in a cast iron skillet to form a circle.
  2. 2Pour a mixture of eggs over the potatoes.
  3. 3Sprinkle cheddar cheese over the eggs.
  4. 4Add cooked bacon bits to the center.
  5. 5Bake in a preheated oven.
  6. 6Remove from oven and let cool slightly.
  7. 7Cut into slices and serve on a plate.
  8. 8Top with sour cream and green onions.
