Potato, Cheese, and Onion Pie

Directions

  1. 1Thinly slice some potatoes.
  2. 2Arrange the potato slices on a baking sheet lined with parchment paper.
  3. 3Spray the potato slices with oil and season with salt and black pepper.
  4. 4Bake the potatoes until they soften.
  5. 5Melt butter in a skillet.
  6. 6Add grated onion to the skillet and fry until softened.
  7. 7Add chopped spring onion to the skillet and fry.
  8. 8Stir in flour to create a roux.
  9. 9Gradually whisk in milk to form a sauce.
  10. 10Add grated cheddar cheese and red Leicester cheese to the sauce.
  11. 11Stir in English mustard until well combined and the cheese has melted.
  12. 12Grease a pie dish with a small piece of butter.
  13. 13Line the pie dish with shortcrust pastry.
  14. 14Trim the excess pastry from the edges of the dish.
  15. 15Spoon a layer of the cheese and onion sauce into the bottom of the pastry-lined dish.
  16. 16Arrange a layer of baked potato slices over the cheese sauce.
  17. 17Continue layering the cheese sauce and potato slices until the pie dish is full.
  18. 18Brush the top layer of cheese sauce with egg wash around the edges.
  19. 19Cover the pie with puff pastry for the top crust.
  20. 20Trim the excess puff pastry around the edges of the pie dish.
  21. 21Crimp the edges of the pastry with a fork to seal the pie.
  22. 22Brush the top of the pie with egg wash.
  23. 23Make a few steam holes in the top crust with a knife.
  24. 24Bake the pie until golden and flaky.
  25. 25Let the pie rest before slicing.
  26. 26Slice into the pie and serve.
