High-protein sweet potato brownie

Directions

  1. 1Preheat oven to 180 Hold up sweet potato.
  2. 2In a bowl, combine mashed sweet potato, peanut butter, maple syrup, and yogurt.
  3. 3Sift in cocoa powder and baking powder and mix until smooth.
  4. 4Add in yogurt.
  5. 5Add in peanut butter.
  6. 6Stir in most of the chocolate chips, reserving some for topping.
  7. 7Transfer batter to the loaf tin, smooth the top, and sprinkle with reserved chips.
  8. 8Bake for 30 minutes, turn off the oven and let it cool completely before slicing.

  • 60 g Greek-style yogurt
  • 40 g cocoa powder, sifted
  • 0.5 tsp baking powder
  • 30 g dark chocolate chips
