Add bread flour, all-purpose flour, salt, sugar, diastatic malt powder, and instant dry yeast to a large bowl.
Whisk the dry ingredients together.
Measure 170g of water at 90 degrees Fahrenheit.
Pour the warm water into the bowl with the dry ingredients.
Add oil to the ingredients in the bowl.
Mix all ingredients with a bowl scraper until the flour is completely incorporated.
Knead the dough for about 5 minutes.
If the dough is too sticky, let it rest for 15 minutes and try kneading again.
Shape the dough into a ball.
Place the dough ball in an oiled container and cover it.
Let the dough rest for 30 minutes.
After 30 minutes, perform stretching folds by folding the dough over itself about four times.
Cover the dough and let it rest again for another 30 minutes.
After the rest, check if the dough passes the window pane test.
Repeat the folds if needed until it passes the window pane test.
From here, you can make your dough ball(s) immediately or let it sit on the counter and make dough balls later, about 3 hours before you plan to make pizza.
Stretch the dough onto a floured surface.
Add tomato sauce and mozzarella cheese to the stretched pizza dough.
Place the pizza into a preheated oven using a pizza peel.
Bake the pizza until golden brown and cooked through.
