  1. 1Start with one and one third cup of warm water, no more than 110 degrees.
  2. 2Add two and a quarter teaspoons of active dry yeast (or one packet) to the water.
  3. 3Add one tablespoon of sugar to the water and yeast mixture.
  4. 4Stir the mixture until everyone can mingle and become friends in here.
  5. 5Set the mixture aside for about 5 to 10 minutes until it gets nice and foamy on top.
  6. 6In a bowl, add three cups of bread flour.
  7. 7Add one teaspoon of salt to the flour and shake it around or whisk it.
  8. 8Before adding the yeast mixture, add two tablespoons of canola oil to the flour.
  9. 9Pour in the yeast mixture.
  10. 10Mix with a silicone spatula or your hands until it turns into a shaggy dough.
  11. 11Turn the dough out onto a clean surface (no flour, dirt, or cat hair).
  12. 12Spray or drizzle some oil in the bowl and set it aside.
  13. 13Gather the dough together and knead it until it becomes a smooth dough, pushing with the heel of your hand.
  14. 14After about 5 minutes of kneading, the dough should look very smooth.
  15. 15Take the oiled bowl, put the dough in top side down, swirl it around, and flip it over.
  16. 16Cover the bowl with a towel or plastic wrap and wait until it doubles in size (about an hour).
  17. 17After the dough has doubled in size, punch it down.
  18. 18Gather the dough to the center and roll it in on itself to make a nice smooth ball.
  19. 19Split the dough into two portions and make them into balls to make two pizzas, or adjust as desired.
