Start with one and one third cup of warm water, no more than 110 degrees.

Add two and a quarter teaspoons of active dry yeast (or one packet) to the water.

Add one tablespoon of sugar to the water and yeast mixture.

Stir the mixture until everyone can mingle and become friends in here.

Set the mixture aside for about 5 to 10 minutes until it gets nice and foamy on top.

In a bowl, add three cups of bread flour.

Add one teaspoon of salt to the flour and shake it around or whisk it.

Before adding the yeast mixture, add two tablespoons of canola oil to the flour.

Pour in the yeast mixture.

Mix with a silicone spatula or your hands until it turns into a shaggy dough.

Turn the dough out onto a clean surface (no flour, dirt, or cat hair).

Spray or drizzle some oil in the bowl and set it aside.

Gather the dough together and knead it until it becomes a smooth dough, pushing with the heel of your hand.

After about 5 minutes of kneading, the dough should look very smooth.

Take the oiled bowl, put the dough in top side down, swirl it around, and flip it over.

Cover the bowl with a towel or plastic wrap and wait until it doubles in size (about an hour).

After the dough has doubled in size, punch it down.

Gather the dough to the center and roll it in on itself to make a nice smooth ball.

Split the dough into two portions and make them into balls to make two pizzas, or adjust as desired.

Tips
Do not use water hotter than 110 degrees Fahrenheit.
After kneading, the dough should be smooth.
The dough should double in size after rising.
You can make two pizzas or three cheesy breads from this dough.
