1Mix cream cheese, 2/3 cup shredded sharp cheddar cheese, 1 1/2 tablespoons heavy cream, and 1/4 teaspoon kosher salt in a small bowl until well combined; set aside.
2Mix 1/2 cup mayonnaise, 2 cloves finely minced garlic, and the remaining 1/4 teaspoon kosher salt in a separate bowl; set aside. This will be the spread for the outside of the sandwich.
3Place two slices of sharp Cheddar cheese on each of four pieces of bread.
4Spread the cream cheese mixture evenly over the four Cheddar-topped slices.
5Top each with two slices of provolone cheese.
6Add the remaining bread slices on top to form sandwiches.
7Spread half of the mayonnaise mixture evenly over the tops of the sandwiches.
8Heat a large nonstick skillet over medium heat.
9Place the sandwiches in the skillet, mayonnaise side down.
10Spread the top of each sandwich with the remaining mayonnaise mixture.
11Cook sandwiches until golden brown on both sides, flipping occasionally until the cheese is melted and the bread is well toasted.
