Directions

  1. 1Soften onions and bell peppers.
  2. 2Brown ground beef and add cumin powder, chili powder, paprika, garlic powder, dried oregano, cayenne pepper, sugar, salt and pepper.
  3. 3Add water, enchilada sauce, canned tomatoes, black beans and pinto beans.
  4. 4Let the chili simmer and thicken while you make the cornbread batter.
  5. 5Mix dry ingredients (flour, cornmeal, kosher salt, baking powder, sugar).
  6. 6Mix wet ingredients (milk, eggs, oil).
  7. 7Combine wet and dry ingredients to form the batter.
  8. 8Layer the chili in an oven-safe dish, top with a thin layer of batter, and bake at 375°F.
