Directions

  1. 1Add all meatball ingredients to a bowl and mix until combined. Roll into small meatballs and place on a large plate.
  2. 2Fry the vegetables in butter in a large pot over medium heat for 20 minutes. Add flour and stir to coat. Slowly pour in both stocks to create the sauce. Stir to remove lumps. Add remaining soup ingredients except pasta, double cream, and sour cream. Simmer for 20 minutes.
  3. 3Add pasta to the soup and stir to combine.
  4. 4Add cooked meatballs to the soup.
  5. 5Stir in fresh parsley.
  6. 6Serve and garnish with Lingonberry jam or cranberry sauce and chopped fresh parsley.

  • 700 ml chicken stock
  • 480 ml double cream
  • 65 ml sour cream
  • 1 lemon juice
  • 1 tbsp fennel seeds
  • 2 tsp Worcestershire sauce
  • 1 tbsp honey
  • 1 tbsp caster sugar
  • 1.5 tbsp soy sauce
  • 0 salt and black pepper
  • 250 g fresh egg pasta
  • 8 g fresh parsley
  • 0 Lingonberry jam or cranberry sauce
  • 0 chopped fresh parsley
