Directions

  1. 1Slice the mushrooms.
  2. 2Grate the cheese.
  3. 3Preheat the oven to 200°C (400°F).
  4. 4In a skillet, heat butter and olive oil over medium heat.
  5. 5Add mushrooms and thyme.
  6. 6Sauté for 8-10 minutes until golden.
  7. 7Season with ground black pepper.
  8. 8Remove thyme sprigs if using fresh.
  9. 9Roll out puff pastry to fit a 25x35 cm (10x14 inch) baking tray.
  10. 10Place on a parchment-lined tray.
  11. 11Score a 1 cm (½ inch) border.
  12. 12Prick the center with a fork.
  13. 13Sprinkle all the Gruyere cheese evenly over the center of the pastry.
  14. 14Spread the sautéed mushrooms over the cheese.
  15. 15Lightly beat a small egg.
  16. 16Brush the pastry edges with beaten egg for a golden finish.
  17. 17Bake for 15-20 minutes, until pastry is golden and puffed.
  18. 18Cool slightly, slice, and serve warm.
