Cheat's Homity Pies

Directions

  1. 1Heat the oven to 180C.
  2. 2Grease the side of the pie dishes with butter.
  3. 3Cut out 4 x 20cm circles from the two sheets of pastry.
  4. 4Gently push the pastry into the pie dishes, making sure it goes into the corners and sticks to the sides.
  5. 5Prick holes in the bottom of the pastry using the prongs of a fork.
  6. 6Cut out 4 x 20cm circles from baking paper.
  7. 7Push each one into the pie dish and tuck it over the edge so the pastry is covered.
  8. 8Fill each one with around 2-3cm baking beans.
  9. 9Bake in the oven for 10 minutes.
  10. 10Lift the paper and beans from the pie cases and bake for another 5 minutes.
  11. 11Whilst the pie crust is baking, heat a drizzle of oil in a large non-stick pan.
  12. 12Add the onion and fry for 5-7 minutes until soft.
  13. 13Place the mashed potato into a mixing bowl.
  14. 14Gently warm through in the microwave so that it's easier to stir.
  15. 15Mash it with a fork.
  16. 16Add 100g grated cheese, chopped fresh herbs, fried onions, chopped spinach and milk to the bowl.
  17. 17Season with salt and pepper.
  18. 18Give it a good stir until all the ingredients are combined.
  19. 19Fill the pie cases with the mash until filled to the top.
  20. 20Cover in grated cheese and return to the oven for 20 minutes until golden brown.

  • 2 sheets ready rolled shortcrust pastry
  • 2 400g ready made mashed potato
  • Oil for frying
  • 2 large onions finely chopped
  • 100 g grated cheddar cheese
  • 50 g fresh spinach finely sliced
  • 50 ml milk
  • 2 tbsp finely chopped fresh herbs (I used Thyme, Rosemary and Sage)

Tips

  • If you don't want to make them quite as big, you can freeze any leftover filling or just make one big pie.
