Crack three large eggs into a clear measuring cup.

Measure the exact same amount of all-purpose flour as the eggs.

Measure the exact same amount of 1% or 2% milk as the eggs.

Pour the eggs into a bowl.

Add the flour to the eggs in the bowl.

Whisk the eggs and flour until smooth to prevent lumps.

Pour the milk into the egg and flour mixture.

Whisk the batter again until it is a little looser than whipped cream, smooth, and pourable, but not too thick.

If the batter is too thick, add a little more milk; if it's too loose, add a touch more flour, little bits at a time.

Pour the batter into a pourable container.

Rest the batter on the counter for two hours, or stick it in the fridge overnight if preparing ahead.

Right before baking, add a good pinch of salt and whisk it one more time.

Set your oven to 450 degrees Fahrenheit and make sure the convection fan is off.

Place an empty muffin pan on a quarter sheet tray.

Place the muffin pan into the oven for about 10 minutes to heat up.

Carefully pull the hot muffin pan out of the oven.

Add about two tablespoons of oil or beef drippings into each cup of the hot muffin pan.

Put the muffin pan back into the oven and cook for another 10 minutes until the oil is shimmering or even lightly smoking.

Move quickly: pull the pan out of the oven.

Fill each cup halfway to two-thirds full with your batter.

If drops of batter get on the edges, wipe them off.

Place the muffin pan right back into the oven immediately.

Bake in the oven at 450 degrees Fahrenheit for 10 to 12 minutes until they are tall and puffed.

Drop the oven temperature to 350 degrees Fahrenheit and let them cook for another 10 to 12 minutes.

Once done, immediately transfer them onto a cooling rack to keep the bottom nice and crisp.

Tips
Use 1% or 2% milk to prevent hindering the rise of the Yorkshires.
Rest the batter for 2 hours at room temperature, or overnight in the fridge.
Ensure the convection fan is off as it can mess with the rise of the puddings.
The oil must be ripping hot; if it's not, the puddings won't rise.
Move quickly when pouring the batter into the hot oil.
Wipe off any batter drops on the edges of the muffin pan to prevent them from sticking and stopping the puddings from rising.
Do not open the oven door while the puddings are baking, as the heat will escape and they will collapse.
