Sausage and Mash

Directions

  1. 1Start the beer and onion gravy. Use a stout for the sauce and let it reduce slowly.
  2. 2Cut the onions neatly and the garlic finely.
  3. 3Add onions and garlic to the pan. Add rosemary and stir.
  4. 4Flame the onions with brandy using a torch.
  5. 5Add balsamic vinegar and a little bit of stock.
  6. 6Add sausages to the pan and cook evenly to get a great colour. Sit them in butter paper with garlic and rosemary.
  7. 7Counteract the bitterness of the stout by incorporating a little bit of honey.
  8. 8Make the mash. Push the baked potato through a sieve; don't scrape it.
  9. 9Add milk and butter to mashed potatoes to make it rich.
  10. 10Serve the sausages over the onion gravy with the mashed potatoes.

  • 1 head garlic
  • 1 sprig rosemary
  • 1 small bottle brandy
  • 1 splash balsamic vinegar
  • 1 little bit stock
  • 1 little bit honey
  • 1 cup milk
  • 1 baked potato
