Start the beer and onion gravy. Use a stout for the sauce and let it reduce slowly.

Cut the onions neatly and the garlic finely.

Add onions and garlic to the pan. Add rosemary and stir.

Flame the onions with brandy using a torch.

Add balsamic vinegar and a little bit of stock.

Add sausages to the pan and cook evenly to get a great colour. Sit them in butter paper with garlic and rosemary.

Counteract the bitterness of the stout by incorporating a little bit of honey.

Make the mash. Push the baked potato through a sieve; don't scrape it.

Add milk and butter to mashed potatoes to make it rich.

Serve the sausages over the onion gravy with the mashed potatoes.

2 white onions
1 head garlic
1 sprig rosemary
1 small bottle brandy
1 splash balsamic vinegar
1 little bit stock
1 little bit honey
1 cup milk
1 baked potato
