1To start the marinade, add chipotle peppers in adobo to a blender.

8Place the marinated chicken thighs on a hot grill pan to get a really nice sear.
9Once cooked, allow the chicken to rest.
10Chop the rested chicken into small cubes.
11Generously oil a flat top griddle and place corn tortillas on it.

13As the cheese melts, add the chicken to half side of the tortillas.
14To make the tacos crispy, fold and toast them.
15Hit the cooked tacos with a little bit of diced tomato.
16Add some fresh lime juice to the tacos.
17Drizzle with spicy al pastor sauce.
18Finally, add some shredded lettuce.
19For the dipping sauce, combine 1 cup sour cream, 1/4 cup chipotle sauce or hot sauce, juice from 1 lime, 1 tsp chili powder, 1 tsp paprika, and salt to taste.
