12Add butter, chopped herbs, blended chipotle peppers, and roasted garlic to a bowl.
13Season with salt and pepper and mix thoroughly until evenly combined.
14Trim any excess fat and skin from the turkey.
15Rinse the turkey and remove the neck.
16Pat the turkey dry with paper towels and season with salt.
17Season the turkey with all-purpose seasoning and pepper.
18Stuff the turkey cavity with lemons and herbs.
19Apply the chipotle butter mixture all over the turkey, making sure to get under the skin of the breasts.
20Season with paprika.
21Place any remaining herbs on top and around the turkey.
22Place the turkey in a roasting tray.
23Roast the turkey at 350°F (175°C).
24After the first hour, remove the turkey and baste it.
25Soak cheesecloth in turkey stock and cover the turkey.
26Return the turkey to the oven and baste every 30 minutes until it reaches an internal temperature of 160°F (71°C), approximately 13 minutes per pound.
27Remove the cheesecloth from the turkey and baste it again.
