Tunacado Cucumber Roll

Directions
- 1Peel the cucumber into long, thin strips.
- 2Arrange the cucumber strips on a chopping board, overlapping them slightly.
- 3Pat the cucumber strips dry with a paper towel.
- 4Spread cream cheese evenly over the cucumber strips.
- 5In a bowl, combine tuna, chopped red onion, capers, and mustard.
- 6Spoon the tuna mixture onto the cream cheese-covered cucumber strips.
- 7Add sliced tomatoes and avocado on top of the tuna mixture.
- 8Sprinkle with fresh parsley.
- 9Carefully roll up the cucumber strips, forming a log.
- 10Slice the cucumber log into individual rolls.
- 11Serve and enjoy.
