Tomato Ramen

Directions

  1. 1Pour olive oil into a pot on the stove.
  2. 2Add fresh basil to the olive oil.
  3. 3Open the ramen packet and extract the dehydrated vegetables.
  4. 4Add the dehydrated vegetables to the pot.
  5. 5Add the soup powder to the pot and fry it up with the vegetables and basil.
  6. 6Add a little bit of tomato sauce to the pot and let it simmer for a bit.
  7. 7Add two cups of water to the pot and bring the broth to a simmer.
  8. 8Separate one egg, keeping the yolk and white in separate containers.
  9. 9Grate fresh Parmigiano Reggiano into the egg yolk and mix well.
  10. 10Add the ramen noodles to the simmering broth.
  11. 11When the noodles are almost cooked, lower the heat.
  12. 12Take some broth from the pot and temper the egg yolk mixture by vigorously mixing it.
  13. 13Add the egg white to the pot and mix it in.
  14. 14Once the egg white is set, add the tempered egg yolk mixture to the pot.
  15. 15Grate one clove of fresh garlic into the ramen.
  16. 16Grate more Parmigiano Reggiano into the ramen.
  17. 17Finish by adding olive oil, a knob of butter, and fresh basil to the ramen.
  18. 18Stir everything until the butter melts and the cheese is incorporated.

Tips

  • Time the cooking of the noodles perfectly to keep them al dente, especially when adding other ingredients.
