1Slice the cabbage into wedges and season with salt, white pepper, and coriander.
2Add avocado oil to a stainless clad frying pan and sear the cabbage wedges until charred on both sides.
3Transfer the pan with the seared cabbage directly into the oven to finish cooking at 400°F (204°C).
4Crumble the super firm tofu onto a baking sheet.
5Season the crumbled tofu with five spice, smoked paprika, soy sauce, potato starch, avocado oil, mirin, and hoisin sauce, then mix well.
6Roast the tofu crumble in the oven until the edges are caramelized.
7Prepare the Dan Dan sauce by mixing vegetable broth, Chinese sesame paste, tamari, chili oil, sambal oelek, Sichuan pepper or white pepper, five spice, and maple syrup.
8Whisk the Dan Dan sauce until creamy and thin enough to soak into the cabbage.
9Once the roasted cabbage is ready, spoon plenty of the Dan Dan sauce over each cabbage wedge.
10Top the sauced cabbage with the roasted tofu crumble, adding additional peanuts and green onions.
