1For the chipotle sauce, mix cottage cheese, Greek yogurt, light mayo, chipotle paste, lime juice, honey, garlic powder, and salt to taste in a blender.
2Blend the mixture until completely smooth.
3Add lean ground beef to a pan with some cooking spray.
4Let the beef get a crispy sear.
5Add taco seasoning and mix well to fully coat.
6Add the cooked taco beef to a bowl.
7Pour all of the chipotle sauce over the beef.
8Add cheddar and mozzarella cheese.
9Add chopped cilantro.
10Mix well to form your filling.
11On a warm tortilla, add 1/10th of your beef mix.
12Fold in the sides and roll it up tightly, repeating until you have 10 rolls.
13Place the rolls on a baking sheet lined with parchment paper.
14Give them a spray with cooking spray.
15Sprinkle with parsley.
16Oven bake at 200°C for 8-10 minutes or air-fry at 180°C for 8-10 minutes.
17Store them in the freezer.

Tips
You can store these rolls in the freezer for months.
To reheat, unwrap from the foil, wrap in a paper towel, run under water, squeeze out excess, microwave 4-6 minutes, then air-fry or toast in a pan for a couple of minutes until crispy.
