Chili Cheese Fries

Directions
- 1Heat olive oil in a large pot over medium heat.
- 2Add onion, garlic, and bell peppers. Cook until softened.
- 3Add the beef mince to the pot and cook until browned, breaking it up with a spoon as it cooks.
- 4Stir in chili powder, cumin, paprika and oregano, Cook for 1-2 minutes until fragrant.
- 5Add diced tomatoes, pasta sauce and kidney beans to the pot. Stir until combined.
- 6Bring the chili to a simmer, then reduce heat to low. Cover and let it simmer for at least 30 minutes to allow the flavors to meld together.
- 7Season with salt and pepper to taste.
- 8For the cheese sauce, melt your butter into a saucepan.
- 9Mix the melted butter with flour and milk using a whisk until thick.
- 10Add your cheese and keep mixing until you get a nice thick runny consistency.
- 11Place the chips onto a plate.
- 12Pour your cheese sauce over the chips.
- 13Add your chili on top of the cheese sauce.
- 14Add more cheese sauce at the end.

- 1 jar tomato pasta sauce
- 1 can kidney beans, drained and rinsed

- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- Orange cheese slices
- Cheddar Cheese

Tips
- You can use green or yellow peppers instead of red peppers.
- Break down the minced meat until it's separated.
- Leave the chili on a simmer until the mixture has thickened.
- Keep mixing the cheese sauce until you get a nice thick runny consistency.
- Have your chips frying in the background while making your chili.
