Add 1/3 cup of Tony Chachere's Roasted Garlic and Herb Marinade to a bowl.

Add the juice and zest of one lemon to the marinade.

Add two teaspoons of Creole mustard to the marinade.

Add 4 to 5 chicken thighs to the marinade.

Mix the chicken and marinade well.

Marinate the chicken for 30 minutes.

Take the chicken out of the marinade and pat it dry with paper towels.

Season the chicken with a teaspoon of smoked paprika.

Season the chicken with two teaspoons of Tony Chachere's Spices 'n Herbs Creole Seasoning.

Rub the seasoning into the chicken.

Add a tablespoon of avocado oil or olive oil to a cast iron skillet over medium-high heat.

Sear the chicken thighs on both sides for 3 minutes until golden brown.

Remove the chicken from the skillet.

Add a tablespoon of unsalted butter to the skillet.

Sauté two shallots for 4 minutes.

Add a clove of garlic to the skillet and sauté.

Add a bag of Tony Chachere's Dirty Rice Mix to the skillet and mix it with the shallots and garlic.

Add 2 and 1/4 cups of chicken broth to the skillet.

Place the seared chicken thighs back into the skillet with the rice and broth.

Cover the skillet and bake in the oven at 350°F (175°C) for 30 minutes.

Remove the skillet from the oven and fluff the rice.

Brush the chicken with a little oil for a nice shine.

Return the skillet to the oven, uncovered, for 10 minutes.

Garnish with fresh parsley and lemon slices.

2 shallots

2.25 cups chicken broth

Tips
