Slice up your Andouille sausage.

Put the sausage in a pot and render all that fat.

Add one cup of oil to the rendered fat.

Add just under one cup of flour.

Whisk it smoothly until it's a nice chocolate brown.

Add your diced yellow onions, green peppers, and green onions.

Pour in about five to six cups of chicken broth.

Add in some turkey necks that were previously boiled for about an hour to get them nice and tender.

Add in all of your seasonings.

Add in vinegar.

Add in Worcestershire sauce.

Add in your cleaned and chopped greens.

Let these cook covered for about 40 minutes to an hour on low heat.

For the last five minutes of cooking, add back in your sausage.
