Directions

  1. 1Slice up your Andouille sausage.
  2. 2Put the sausage in a pot and render all that fat.
  3. 3Add one cup of oil to the rendered fat.
  4. 4Add just under one cup of flour.
  5. 5Whisk it smoothly until it's a nice chocolate brown.
  6. 6Add your diced yellow onions, green peppers, and green onions.
  7. 7Pour in about five to six cups of chicken broth.
  8. 8Add in some turkey necks that were previously boiled for about an hour to get them nice and tender.
  9. 9Add in all of your seasonings.
  10. 10Add in vinegar.
  11. 11Add in Worcestershire sauce.
  12. 12Add in your cleaned and chopped greens.
  13. 13Let these cook covered for about 40 minutes to an hour on low heat.
  14. 14For the last five minutes of cooking, add back in your sausage.
