One-Pan Baked Cod

Directions

  1. 1Preheat the oven to 400°F.
  2. 2Arrange a layer of the thinly sliced yellow squash on the bottom of a baking pan or parchment paper.
  3. 3Drizzle the squash with a little olive oil and season with sea salt and black pepper.
  4. 4Rub the cod fillets directly with paprika, garlic powder, onion powder, and a little more salt and pepper.
  5. 5Place the seasoned fillets on top of the bed of yellow squash.
  6. 6Arrange the bunch of asparagus and cherry tomatoes in the pan around the fish.
  7. 7Drizzle these veggies with a splash of olive oil and a pinch of salt.
  8. 8Place the pan in the oven and bake for 25 minutes, or until the fish is opaque and flakes easily with a fork.
  9. 9When taking it out of the oven, drizzle a little salted butter on top of the fillets.
  10. 10Sprinkle the freshly chopped parsley over the entire pan.
  11. 11Serve hot straight from the pan and enjoy a delicious, hassle-free dinner!

  • 2 small yellow squash, thinly sliced

  • Freshly chopped parsley
