1Clean and cut pork spare ribs into individual ribs.
2In a bowl, combine ribs with shao xing wine (or white wine), oyster sauce, honey, brown sugar, soy sauce, black pepper, and garlic powder. Mix until each rib is coated.
3Heat oil in a wok over medium-high heat.
4Add whole cloves of garlic and sauté for about 30 seconds.
5Pour in the marinated ribs, ensuring they are flat, meat-side down.
6Pour 1 cup of water over the ribs.
7Cover and simmer on medium-high heat for 16-20 minutes, flipping halfway through.
8Uncover the ribs when more than 3/4 of the liquid has evaporated. Continue cooking on medium heat until sticky and browned.
