1Finely mince two cloves of garlic, taking the time to ensure no big pieces remain.
2Finely chop two green onions.
3Finely dice a 2-inch section of carrot by first cutting into small strips and then into small cubes.
4Cut the chicken (breast or thigh) into strips, then into large dice.
5Marinate the chicken by adding 2 tsp soy sauce, 1 tsp oyster sauce, 1 tsp wine, 1/2 tsp sugar, 1/4 tsp baking soda, 2 tsp corn starch, and 1/8 tsp white pepper powder.
6Mix all seasonings into the chicken and then add 2 tsp of oil, mixing again.
7Over medium-high heat, add 2 tbsp of oil to a pan and crack two eggs directly into the pan.
8Stir-fry the eggs until they are golden and you smell the fried eggs, then set them aside.
9Add 1 tbsp of oil to the hot pan (if it looks dry) and pour the chicken in, spreading it out.
10Pan-fry the chicken a little bit without stirring.
11Add the minced garlic and stir-fry the chicken until it is 70-80% done.
12Add the diced carrots and stir-fry until they are coated with oil.
13Add the green peas and stir-fry for about 30 seconds, then remove the chicken, carrots, and peas from the pan and set them aside.
14Add 1 tbsp of oil to the pan.
15Add 2 cups of warm cooked jasmine rice to the pan and break up any clumps with a spatula.
16Put the eggs back into the rice and briefly mix them.
17Season with 1/4 tsp salt and mix well.
18Add 3 tsp of dark soy sauce gradually, pouring it directly onto the hot surface of the pan, and stir-fry until the color is even.
19Add the chicken, carrots, and green peas back into the fried rice and mix everything up evenly.
20Add the chopped green onions and mix them into the fried rice.

Tips
For perfect rice for making fried rice, use jasmine rice with a rice to water ratio of 1 cup of rice to 1 cup of water, and add a few drops of oil.
It's important to add the oil after all the seasoning has been mixed into the chicken.
If you are using leftover rice, it's a good idea to warm it up first in the microwave oven before you put it into the pan. Warm rice is a lot easier to work with. You can break up the clumps a lot easier when it's warm.
When adding the dark soy sauce, add it right to the hot surface of the pan so it sizzles. This brings out more flavor from the soy sauce.
