1Cut a 3 pound beef chuck roast into large chunks.
2Sprinkle 2 tablespoons of Chinese five spice powder on the beef chunks and toss until all the meat is coated well.
3In a measuring cup, mix 1.5 cups of dry sherry, 0.5 cups of packed dark brown sugar, and 0.5 cups of oyster sauce. Set aside.
4Add avocado oil to the bottom of a dutch oven. Add the seasoned beef chunks and let them get a nice crust on all sides. Flip them and remove them to set aside.
5Add 2 tablespoons of chopped fresh garlic and 2 tablespoons of chopped fresh ginger to the dutch oven. Add 1 tablespoon of butter. Cook for about a minute until fragrant.
6Add the sauce to the dutch oven. Bring it to a simmer.
7Add the seared beef back to the dutch oven. Bring to a simmer. Cover and bake at 350 degrees for 1.5 hours. Remove the lid and bake for the last 30 minutes.
8Serve over jasmine rice with fresh chopped green onions.
