Garlic butter chimichurri steak bites

Directions

  1. 1Boil potatoes in heavily salted water until fork tender.
  2. 2Simmer the half-and-half with the garlic, thyme, and bay leaves for 10–15 minutes, then remove the thyme and bay leaves.
  3. 3Drain potatoes and mash. Mix in the butter, garlic powder, sour cream, Parmesan, and warm infused half-and-half until smooth and creamy. Season with salt and pepper.
  4. 4Finely chop the parsley, Fresno chiles, and garlic.
  5. 5Stir in the olive oil, red wine vinegar, salt, red pepper flakes, and lemon juice if using. Let sit while you cook the steak.
  6. 6Pat the steak dry and season with Worcestershire, garlic powder, Kinder's Buttery Steakhouse seasoning, salt, and pepper.
  7. 7Heat oil in a cast iron skillet over medium-high heat. Sear the steak in batches for 1–2 minutes per side until browned. Remove from pan and set aside.
  8. 8Lower the heat, add the garlic butter to the skillet, melt, and toss the steak bites back in until evenly coated. Add 1 tbsp fresh parsley and toss again.
  9. 9Spoon the mashed potatoes onto a plate, top with the garlic butter steak bites, and finish with a generous spoonful of fresh chimichurri.

  • 6 whole yukon gold potatoes, peeled and quartered
