Fried Rice with Pot Stickers

Directions

  1. 1Finely chop carrots, onion, and cilantro.
  2. 2Melt butter in a cast iron skillet over medium heat.
  3. 3Add chopped carrots, onion, and cilantro to the skillet and sauté until softened.
  4. 4Stir in cooked rice.
  5. 5Add soy sauce and frozen peas, mix well to combine.
  6. 6In a small bowl, grate ginger.
  7. 7Add rice wine vinegar and sesame oil to the ginger.
  8. 8Stir to combine.
  9. 9Pour mixture over pot stickers.
  10. 10Crack two eggs into the rice mixture.
  11. 11Mix gently to combine.
  12. 12Garnish with sliced green onions and serve.
