Cinnamon Swirl Cupcakes with Brown Butter Cinnamon Icing

Directions

  1. 1Add 8 tablespoons of melted butter, 3/4 cup of sugar, 2 eggs, and 2 teaspoons of vanilla to a large mixing bowl.
  2. 2Mix until it's all whipped up.
  3. 3Add 3/4 cup of milk and mix.
  4. 4Add 1 and 3/4 teaspoons of baking powder, a pinch of salt, and 2 cups of all-purpose flour.
  5. 5Mix until it's well combined.
  6. 6In a separate bowl, combine 3 tablespoons of melted butter, 1 teaspoon of cinnamon, and 1/3 cup of brown sugar for the cinnamon swirl mixture.
  7. 7Mix the cinnamon swirl mixture and set aside.
  8. 8Line a 12-count cupcake tin with liners.
  9. 9Scoop a little batter into each cupcake liner and add a half teaspoon of the cinnamon swirl mixture on top.
  10. 10Use a toothpick to swirl the cinnamon mixture into the batter.
  11. 11Repeat the process of adding batter and cinnamon swirl mixture, swirling it, until the cupcakes are about 3/4 full.
  12. 12Bake the cupcakes at 350 degrees Fahrenheit for 22 to 24 minutes.
  13. 13While the cupcakes are baking, prepare the brown butter by adding two sticks of salted butter to a pan.
  14. 14Put the butter on high heat until it turns brown.
  15. 15Place the brown butter in the refrigerator to set.
  16. 16Once the cupcakes are done, take them out and let them cool.
  17. 17Once the brown butter is set, scoop it all into a large mixing bowl, making sure to get all the brown bits.
  18. 18Whip the brown butter until it turns white.
  19. 19Add 2 teaspoons of vanilla, 2 teaspoons of cinnamon, and 3 cups of powdered sugar.

  21. 21Add a little bit of milk, about a tablespoon at a time, until you get the right icing consistency.
