Sweet Potato Casserole
Directions
- 1Drain three 40 oz cans of yams in heavy syrup and put them in a large mixing bowl.
- 2Add one can of sweetened condensed milk to the yams.
- 3Add four eggs to the mixture.
- 4Add one cup of sugar to the mixture.
- 5Add one-third cup of light brown sugar to the mixture.
- 6Add one tablespoon of vanilla extract to the mixture.
- 7Add about one teaspoon of pumpkin pie spice to the mixture.
- 8Add ground nutmeg to the mixture (or cinnamon if preferred).
- 9Pour one stick of melted butter into the mixture.
- 10Mix all the ingredients together with an electric mixer until well combined.
- 11Grease a 9x13 baking dish.
- 12Pour the sweet potato mixture into the greased baking dish.
- 13Preheat the oven to 350°F (175°C).
- 14Cook the sweet potato casserole uncovered for about 30 minutes.
- 15While the casserole is baking, prepare the crumble topping by adding two cups of chopped pecans to a mixing bowl.
- 16Add one and a half cups of light brown sugar to the pecans.
- 17Add one cup of all-purpose flour to the mixture.
- 18Mix all the dry ingredients first.
- 19Pour one stick of melted butter into the dry ingredients.
- 20Mix the butter into the dry ingredients until it forms a loose, crumbly mixture.
- 21After 30 minutes, remove the sweet potato casserole from the oven.
- 22Evenly sprinkle the crumble topping over the sweet potato casserole.
- 23Place the casserole back in the oven for another 20 to 30 minutes until the topping is golden brown.
- 24Remove the sweet potato casserole from the oven once it's golden brown and smelling good.
- 25Serve and enjoy the sweet potato casserole.
