1Mix dry ingredients: all-purpose flour, sugar, salt, baking powder, and baking soda in a bowl. Whisk until well combined.
2In a separate bowl, mix wet ingredients: milk, vegetable oil, vanilla extract, apple cider vinegar, and eggs. Whisk until well combined.
3Gently fold the wet ingredients into the dry ingredients until just combined. DO NOT OVERMIX. Lumps are ok
4Heat griddle and melt some whipped salted butter on it.
5Using a berry spoon, scoop the batter onto the hot griddle. Leave some space between pancakes.
6Cook the pancakes until bubbles start to form and pop on the surface. Flip them gently using a plastic spatula, away from you, and cook the other side.
7Serve pancakes with whipped salted butter and maple syrup.
